last week, i was perusing Pinterest for a healthy clean breakfast that AB could
grab and take on the go when he was headed to work early in the morning.
for the month of February, we participated in a clean eating challenge
headed up by my dear friend Ruthie. i knew he was getting tired of the usual
apple or orange on his way out the door, so i decided to try a recipe i found on eatcleandiet.
we already had all the ingredients and that made it even more simple than it already was.
and..the muffins were AMAZING with an extra ZING. seriously, you guys.
they don't even have flour in them! i was skeptical at first, but when a delicious odor started
flowing out of the oven, i knew they were going to be a hit.
i changed a few things in the recipe to my own liking, or what i had on hand. enjoy!

2 cups frozen blueberries, still frozen
1 cup unsweetened coconut milk (or any kind of milk)
1/4 cup honey
2 eggs
1 tablespoon baking powder
3 cups old-fashioned or quick oats
Mix bananas, blueberries, milk, honey, eggs and baking powder. Once it is well combined, add the oats a cup at a time and mix. Let the mixture sit for about 5 minutes, then spoon into a 12 cup
muffin pan that has been sprayed with cooking spray.
Fill each cup all the way to its brim. Bake for 25 to 30 minutes. Let sit for a minute, then loosen edges with knife and remove to cool on a cooling rack. Mine seemed a bit loose to move, but the bottoms were very moist from the bananas and I thought moving them to a rack would help dry them up a bit. These are pretty heavy and serve as a great mid-day snack or quick meal!
